Soba which is the Japanese word for roasted buckwheat, gives a delicious nutty flavor and crunchy texture of this chocolate. This roasted soba is specially made by Mr. Kotani, the owner of the well known soba restaurant Uzuki in Greenpoint, Brooklyn, NY.
